College Student Cooking Eggplant.... hummm

So let me just explain a little back ground on the situation. My roommate and I are/ have started a little competition to see who can lose the most weight by the end of the semester winner gets ....Drum roll please.... NEW PANTS.... The loser has to buy them ..... anywho I want those dang pants... there is no way I am loosing.... Her strategy is the 3-2-1 slim fast diet thing... No harshing it or bashing going on with that I just can NOT see myself drinking shakes and eating bars to lose weight.... I LOVE FOOD!!! Which Is why Im where I am at... SO my plan is just to watch what I eat... eat a more variety of food, and burn more calories then I take in with some exercise..... SO thats how we ended up here, cooking eggplant in a college kids dorm... and I must say it was not that bad I just need to figure out how to make the skin not so chewy and Ill eat it more because the taste is AWESOME!!!

Here is the end product: And yes I am in college so That is our "fine China"

Sorry the pictures are a little blurry and off but I took them using my computer not my camera since I don't have a way to upload them off my camera yet :)

Well, Im off to exercise its some cardio and abs tonight so until I try a new dish Bon Appetit :)

Oh P.S:  its whole wheat pasta with eggplant that has just been sauteed with a little bit of garlic with tomatoes  tossed in a tiny bit of olive oil and parmesan cheese  and the chicken that was just cooked in the pan on the stove ... I think the technical term is seared or something like that :)

P.S.S Thats all it took since how I made it up and It tasted pretty good :)

  3. Here's another quick dish for you to try. Spaghetti squash. Have you eaten it?

Cut one spaghetti squash in half. Place flat side down in a baking dish. Cook at 375 for 30-45 minutes. Use a fork to "shred" the squash into a bowl.

Heat some pasta sauce and pour over the squash. YUM! Tastes just like spaghetti - only healthier and fewer calories. =) Good luck!
